I bake ALL THE TIME and just about every time I bake I try to make a new flavor combination. Sometimes it's a bust but sometimes OMG it turns out really really well, like, "I should have my own bakery" well. (Not to toot my own horn, but *toot toot*)
My cupcakes have become so well known at work that when I wasn't going to make cupcakes for our holiday party because I didn't have time, my boss told me not to come in for one of my shifts so I could make them! Yea, they're that good.
OK, I got a little off track there but my point is: I have made a lot of cupcakes and they're all super delicious so I have put together a list of my favorite 3 creative cupcake & icing combinations. They are just so good, thinking about them is making my mouth water! 😋
Lemon Raspberry Cupcake
The cake itself was a lemon cake and the icing was the raspberry part with a fresh raspberry on top. I love incorporating fresh ingredients into my cupcakes because it gives it that little something extra.
These flavors aren't too wild and crazy of a combination but they're really versatile so you could do whatever you'd like with them like lemon & blueberry, lemon & blackberry, lemon & strawberry. Basically what I'm getting at is that lemon + berries = delicious.
Caramel Apple Cupcake
So this cupcake is cheating just a little bit because it's not technically a cupcake + icing combination but just replace the word "icing" with "topping" and we're good to go.
This was a cinnamon cake with a caramel apple topping that was the simplest thing to make. All I did was buy a bag of unwrapped caramel bits from the baking aisle at the grocery store (I might have used two bags but I had like 36 cupcakes so I needed a lot), I chopped up some fresh apples, and melted it all together with a little bit of butter. The butter was just to give it the proper consistency.
These would be delicious with vanilla ice cream or a vanilla icing which would make it Caramel Apple Cupcake a la Mode!

Blueberry Mojito Cupcake
This last cupcake is my all-time favorite, hands down and it's making my mouth water. I wish I was on a beach with one of these bad boys!
Definitely one of the most creative cupcake & icing combinations I've ever done. It uses a blueberry cake with lime icing and a fresh blueberry and fresh mint on top. I made these for the holiday party I mentioned earlier and they were a huge hit. My boss certainly was glad he gave me the night off to bake!
These cupcakes are pretty versatile as well since there are multiple ways you can make a mojito. Perhaps a Pineapple Upside-Down Mojito Cupcake??
